Ingredients
Cake Layer
• 1 box (15.25 oz) yellow cake mix
• 1/2 cup unsalted butter, melted
• 1 large egg
Cream Cheese Layer
• 8 oz cream cheese, softened
• 2 large eggs
• 1 teaspoon vanilla extract
• 1/2 cup unsalted butter, melted
• 3 1/2 to 4 cups powdered sugar
Directions
Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or line it with parchment paper.
In a medium bowl, combine the yellow cake mix, melted butter, and 1 egg. Stir until a thick dough forms.
Press the cake mixture evenly into the bottom of the prepared baking dish to form the base layer.
In a large bowl, beat the softened cream cheese until smooth and creamy.
Add the eggs and vanilla extract, mixing until fully combined.
Slowly mix in the melted butter, then gradually add the powdered sugar. Beat until smooth and pourable.
Pour the cream cheese mixture evenly over the cake layer, spreading gently to cover.
Bake for 40–45 minutes, or until the top is golden brown and the center is slightly gooey but set around the edges. Do not overbake.
Allow the cake to cool completely before slicing into bars. Dust with additional powdered sugar if desired before serving.
Optional Tips / Variations
• For extra gooey bars, use the full 4 cups of powdered sugar and avoid overbaking.
• Swap yellow cake mix for chocolate or butter pecan for a fun flavor twist.
• Add 1/2 cup chopped pecans or chocolate chips to the cream cheese layer for added texture.
• Store leftovers covered at room temperature for up to 2 days or refrigerate for up to 5 days.
• These bars freeze well — wrap tightly and freeze for up to 2 months.

Total Time

Servings
6–8 servings
Ingredients
• 1 cup (2 sticks) unsalted butter
• 4 ounces semisweet chocolate, chopped
• 4 large eggs, at room temperature
• 2 cups granulated sugar
• 1 teaspoon pure vanilla extract
• 3/4 cup all-purpose flour
• 1/4 cup unsweetened cocoa powder
• 1/2 teaspoon kosher salt
• Vanilla ice cream or whipped cream, for serving (optional)
Directions
Preheat the oven to 325°F (165°C). Lightly grease a 2-quart baking dish or 9-inch square baking pan.
In a heatproof bowl set over simmering water (or in short intervals in the microwave), melt the butter and semisweet chocolate together, stirring until smooth. Remove from heat and allow to cool slightly.
In a large mixing bowl, beat the eggs and sugar together on medium-high speed for 5–8 minutes, until thick and pale yellow.
Slowly add the vanilla extract and the slightly cooled chocolate mixture to the egg mixture, mixing on low speed until combined.
Sift together the flour, cocoa powder, and salt. Gently fold the dry ingredients into the chocolate batter until just combined. Do not overmix.
Pour the batter into the prepared baking dish and smooth the top evenly.
Bake for 50–55 minutes, or until the top is set and slightly cracked but the center remains soft and pudding-like.
Remove from the oven and allow to cool for 15 minutes before serving. Spoon into bowls while still warm for the best gooey texture.
Optional Tips / Variations
• For an extra fudgy center, slightly underbake by 3–5 minutes and serve warm.
• Stir in 1/2 cup chocolate chips or chopped walnuts for added texture.
• Add 1 teaspoon espresso powder to deepen the chocolate flavor.
• Store leftovers covered in the refrigerator for up to 4 days; reheat gently before serving.
• Serve with vanilla ice cream or fresh berries for a beautiful presentation and flavor contrast.
